Pumpkin French Toast

Serves:  4

2 eggs
1/4 cup skim milk
1/4 cup pumpkin puree
1/4 tsp vanilla
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp cloves
1/8 tsp nutmeg
2 tbl brown sugar
8 slices bread

  1. Mix the eggs, milk, pumpkin puree, vanilla, cinnamon, ginger, cloves, nutmeg and brown sugar in a low, shallow bowl.
  2. Dip the bread into the egg mixture on both sides; lightly brown 2-3 minutes per side.
  3. Serve with syrup.
